August in Pennsylvania

If it’s August, it is tomato season.  Corn, peppers, carrots, and beets, too, but tomatoes take center stage.  Tomatoes make such a colorful display that they upstage every other vegetable.  Almost anyone can grow tomatoes, so when I’m riding down the road, any road this time of the year, I come across mini veggie stands in front of houses.  People put out a few tomatoes when they have more than they can eat and ask a few dollars for them.  Tomatoes seem to be everywhere right now, but I remind myself to enjoy them because in a few weeks, they will disappear (well, the really good, fresh ones anyway) until next season.

Tomato salad, tomatoes and pasta, tomatoes and eggs…the bounty of August.
